Of peasant origin, aubergines in oil represent a true must of Neapolitan culture. Formerly preserved in terracotta jars, they are made between August and September, when the vegetable finds its maximum expression in terms of seasonality. The aubergines, cut into strips, marinate in a mix of oil, fresh garlic, chilli pepper and oregano. This combination creates a perfect balance between the slightly spicy flavour and the intense aroma. The process of preserving in oil is a natural preservation that keeps the qualities of the aubergines intact, preserving their flavour and consistency without the addition of artificial preservatives.
How to use them
In a salad (for those who love a burst of flavour), As an appetizer, accompanied by cold cuts and cheeses (for aperitifs with friends), As a side dish to a meat dish (for those who prefer strong flavours)
